I noticed lots of fresh dill at the farmers market last week, but passed it up as usual because it’s not an herb that I use regularly.

After writing this post on the benefits of dill and finding so many good recipes for using it (like the dill pickle chicken salad), I’m going to make sure to get some when I go back next week!

Not only does dill brighten dishes with its herby flavor, but it’s also full of antioxidants that reduce inflammation and have a soothing effect on the gut (the word dill means “to soothe” in Latin).

Dill has been used for cooking and medical purposes for centuries, with all parts of the plant being edible, including the seeds, stems, leaves, and flowers.

Some of the most common medicinal uses of dill include alleviating indigestion, treating ulcers, and inhibiting the growth of harmful bacteria.

It also has powerful anti-inflammatory properties that protect the brain from neurodegeneration.
