I made this sesame edamame salad for our family 4th of July party and it was a huge hit.Β
It's full of big bold flavors from the sesame ginger dressing and fresh cilantro, with an added crunch from chopped peanuts.Β
The edamame pack in 11 grams of protein and 5 grams of fiber per 1/2-cup serving to stabilize blood sugars, and also contain numerous phytochemicals with anti-inflammatory properties.Β
This salad comes together in no time and is perfect for lunches or a side dish for summer parties.Β
